Because what’s Hanukkah without a little brisket? And we do mean little, as in just the flat, not the whole packer.
Rather than the standard, soupy, East Coast Urban brisket with the root vegetables etc., this year we have decided to attempt the Tejas smoked variety — Tejas! Hoping for a good bark at the end of this, except not the kind of bark emitted by Kevork the Rocky Mountain Spotted Retriever, although he may very well be clamoring for some when it’s done! Low & slow at 225°F or thereabouts (smokers are finicky!) for however long it takes, no fewer than 8 hrs., probably. Yahweh willing, it will turn out OK. If not, there’s always the latkes.
